My BBQ chicken pizza bread is perfect for game day or night of the week. It's incredibly simple, use a large Italian bread loaf as the base, add your toppings and enjoy! BTW Ranch on the side is a must.

Ingredients:
1 Italian Bread loaf
4 tbsp BBQ Sauce homemade or store-bought
4 oz Shredded Mozzarella
4 oz Shredded Cheddar Cheese
2 Cooked Chicken Breasts (Shredded or Chopped)
1/4 of a Sliced Red Onion
2 tbsp Handful of Chopped Cilantro
1/4 cup Ranch Dressing homemade or store-bought

My wine braised short ribs are fall-off-the-bone tender and perfect to make for Valentines day or a special night. All of the work happens upfront, giving you plenty of time to relax and enjoy the evening. Enjoy!

Ingredients
2 tbsp Olive Oil
2.5 to 3 lbs. Bone in Short Ribs
2 Diced Celery Stalks
1 Diced White or Yellow Onion
1 ½ cups Diced Carrots
3 Minced Cloves of Garlic
2 cups of Red Wine
2 tbsp Tomato Paste
1 tbsp Chopped Rosemary
1 cup Water or Broth
Salt and Pepper to taste

If you're not super into salads this is the one to change your mind. My BBQ chicken salad with homemade ranch dressing is fresh and tasty. The idea may or may not have come from my former place of work but it's no longer on the menu so there's no actual proof. Enjoy!

Ingredients
Salad~

4 cups Mixed Greens
2 Chicken Breasts (Sliced thin to make 4)
2 Tomatoes cut into wedges (or 1 cup of Cherry tomatoes)
1 cup Sliced Cucumber
½ cup Shredded Cheddar Cheese
¼ cup Chopped Cilantro

Homemade BBQ Sauce~

1 cup Ketchup
1 cup Brown Sugar
½ cup Apple Cider Vinegar
1 tsp Salt
½ tsp Pepper
1 tsp Garlic Powder
1 tsp Paprika
½ tsp Crushed Red Chili Flakes (optional)

Homemade Ranch Dressing~

1 cup Greek Yogurt or Sour Cream
½ cup Mayonnaise
2 tbsp Lemon Juice
2 cloves of Garlic (minced or grated)
1 tsp Dried Dill
1 tsp Dried Thyme
½ tsp Salt

These crispy chipotle chicken tacos with avocado c

These crispy chipotle chicken tacos with avocado cilantro crema are so simple to make for your next taco Tuesday. They're baked in the oven for a crispy outer shell. Perfect for dunking into a bowl of avocado crema.

1 pound Ground Chicken
1 Small Onion Diced
2 Chopped Canned Chipotle Chilis in Adobo Sauce + 1 tbsp of the adobo sauce (or 1 tbsp of Chipotle Chili Powder)
1 tsp Ground Cumin Powder
1 tsp Paprika
1 tsp Salt
½ tsp Ground Black Pepper
1 Juice of 1 lime
12 Corn Tortillas
2 tbsp Oil
¼ cup Chopped Cilantro
Avocado Cilantro Crema
1 Avocado
½ cup Sour Cream or Greek Yogurt
¼ cup Cilantro
1 Juice from 1 lime
½ tsp Salt
½ tsp Ground Black Pepper

Instructions
Preheat your oven to 400 degrees F. Heat a large pan on the stove over medium heat and add 1 tbsp of cooking oil to the pan. Add in the diced onion and cook for 3 minutes. Place the ground chicken to the pan and cook until cooked through about 8-10 minutes. Add in the chopped chipotle peppers and 1 tbsp of the adobo sauce from the can ( or 1 tbsp of chipotle chili powder), the ground cumin powder, paprika, lime juice, salt and pepper. Mix well.
Warm the corn tortilla shells in the microwave wrapped in a damp paper towel or kitchen towel for 30 seconds or until warm. Fill each taco by brushing or rubbing a few drops of oil on the outside of the shell. Add about a 1/4 cup of the chicken filling to half of the taco. Top with cilantro and shredded mozzarella cheese, fold the top over to cover and transfer to a large baking sheet. Repeat with the remaining corn tortilla shells.
Place the tacos in the oven for 10 minutes or until the shells are crispy on the outside. While the tacos are cooking make your avocado cilantro crema. Add the sour cream or Greek yogurt, avocados, lime juice, cilantro, salt and pepper to a food processor or blender and blend on high until creamy.
Remove the tacos from the oven and enjoy!
