So much flavor is packed into every bite of this tomato and sausage pasta with creamy goat cheese. The homemade sauce is cooked down to concentrate the flavors then topped with creamy goat cheese for extra creaminess.

Ingredients
16ozGround Sausage
1Shallot or Small Onion
3 Cloves Garlic
2tbspOlive Oil
1tbsp Sugar
½tspSalt
2tbspBalsamic Vinegar
1tspFresh or Dried Oregano
1tspFresh or Dried Thyme
115ozCan Diced Tomatoes
3ozGoat Cheese
¼tspRed Pepper Flakes (optional)
15ozYour Favorite Pasta

Instructions
Slice the shallots and chop the garlic. Heat a large pan to medium heat with olive oil. Add the shallots to a pan with salt and sugar. Cook for 5 minutes. Add in the sausage, break it up with a spoon and cook for 10 minutes or until browned.
Drain extra fat in the pan. Add in the garlic, balsamic vinegar, oregano, and thyme. Cook for a minute, then add in the diced tomatoes. Mix until combined. Cover and cook on low heat for 30 minutes.
Bring a pot of water to a boil and add salt. Cook your pasta according to the directions on the package.
Add the goat cheese and red pepper flakes, if desired, to the sauce. Add in the pasta and toss until combined. Top with more goat cheese and parmesan cheese and enjoy!
Notes
The key to a flavorful sauce is to let the sauce cook down for enough time to have the flavors meld together. Start your pasta water about 20 minutes before your sauce is ready, so the pasta is ready and stays warm.
