Ingredients

  • 16 oz Ground Sausage
  • 1 Shallot or Small Onion
  • 3 Cloves Garlic
  • 2 tbsp Olive Oil
  • 1 tbsp Sugar
  • ½ tsp Salt
  • 2 tbsp Balsamic Vinegar
  • 1 tsp Fresh or Dried Oregano
  • 1 tsp Fresh or Dried Thyme
  • 1 15oz Can Diced Tomatoes
  • 3 oz Goat Cheese
  • ¼ tsp Red Pepper Flakes (optional)
  • 15 oz Your Favorite Pasta
  • Parmesan Cheese for Topping

Instructions

  • Slice the shallots and chop the garlic. Heat a large pan to medium heat with olive oil. Add the shallots to a pan with salt and sugar. Cook for 5 minutes. Add in the sausage, break it up with a spoon and cook for 10 minutes or until browned.
  • Drain extra fat in the pan. Add in the garlic, balsamic vinegar, oregano, and thyme. Cook for a minute, then add in the diced tomatoes. Mix until combined. Cover and cook on low heat for 30 minutes.
  • Bring a pot of water to a boil and add salt. Cook your pasta according to the directions on the package.
  • Add the goat cheese and red pepper flakes, if desired, to the sauce. Add in the pasta and toss until combined. Top with more goat cheese and parmesan cheese and enjoy!

Notes

The key to a flavorful sauce is to let the sauce cook down for enough time to have the flavors meld together. Start your pasta water about 20 minutes before your sauce is ready, so the pasta is ready and stays warm.
