Crispy Breaded Chicken Cutlets

Ingredients

  • 4 chicken breasts sliced horizontally, or 8 thinly sliced chicken breasts
  • 2 eggs beaten
  • 2 cups bread crumbs seasoned
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 to 2 cups neutral oil such as vegetable or canola

Instructions

  • Prepare the chicken by slicing each breast horizontally to create thin cutlets. Season both sides with salt and pepper.
  • Set up a breading station with two bowls. Beat the eggs in one bowl and place the seasoned bread crumbs in the other.
  • Dip each chicken cutlet into the eggs, allowing any excess to drip off, then coat thoroughly with bread crumbs. Press gently to help the crumbs stick.
  • Heat the oil in a large skillet over medium heat until shimmering. Fry the chicken cutlets in batches, being careful not to overcrowd the pan. Cook each side for 3 to 4 minutes until golden brown and fully cooked through.
  • Transfer the cutlets to a wire rack or paper towel-lined plate to drain excess oil. Serve warm and season with salt.

Notes

✔️ Make sure the chicken breasts are evenly thin for quick and even cooking.
✔️ Do not overcrowd the skillet. Fry in batches for the crispiest cutlets.
✔️ Use a wire rack instead of paper towels for draining if you want to maintain maximum crunch.
✔️ For extra flavor, add grated Parmesan cheese and Italian herbs to the bread crumbs.
