Ingredients

  • 3/4 cup unsalted butter melted
  • 1 tbsp of a neutral oil
  • 3/4 cup Dutch-process cocoa powder
  • 1 teaspoon vanilla extract
  • 3/4 cup brown sugar
  • 1 cup powdered sugar
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup fresh or frozen raspberries
  • 1/2 cup semisweet or bittersweet chocolate chips or chopped chocolate

Instructions

  • Preheat your oven to 350 degrees and line an 8x8 or 9x9 aluminum baking pan with parchment paper.
  • In a medium heat-proof bowl, whisk together the melted butter, oil, and cocoa powder until smooth.
3/4 cup unsalted butter, 1 tbsp of a neutral oil, 3/4 cup Dutch-process cocoa powder
  • In a separate bowl, add the brown sugar, powdered sugar, and eggs. With a handmixer, standmixer, or by hand, beat the eggs and sugar until frothy and pale, about 4-5 minutes. Add the vanilla extract and mix until smooth.
3/4 cup brown sugar, 1 cup powdered sugar, 3 large eggs, 1 teaspoon vanilla extract
  • Add the chocolate mixture to the beaten egg and sugar mixture and mix until just combined. Fold in the flour and salt until just combined. Make sure you do not overmix.
    3/4 cup all-purpose flour, 1/2 teaspoon salt
  • Fold in the chocolate chips and gently fold in the raspberries, being careful not to break them up too much. Pour the batter into the prepared 8x8 aluminum pan and spread evenly.
1/2 cup fresh or frozen raspberries, 1/2 cup semisweet or bittersweet chocolate chips
  • Bake for about 25 to 30 minutes or until the center is set but still slightly soft. Allow the brownies to cool completely before slicing. Enjoy!

Notes

✔️ Do not overmix the batter to keep the brownies soft and fudgy.
✔️ Use a good-quality cocoa powder for the richest chocolate flavor.
✔️ Fold in raspberries gently to keep their shape.
✔️ Slightly underbake for a fudgier texture.
✔️ Let the brownies cool fully before cutting for clean slices.
