Maple and Pumpkin Granola

This Maple and Pumpkin Granola is crunchy, flavorful, and filled with the best fall flavors. Easy to make and endlessly versatile, it is perfect for breakfast, snacking, or even gifting during the holidays.

Ingredients

  • 3 cups rolled oats
  • 1/2 cup brown sugar
  • 1 cup slivered almonds
  • 1/2 cup pumpkin seeds or sunflower seeds
  • 1 tablespoon chia seeds
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup maple syrup
  • 1/2 cup pumpkin puree
  • 1/2 cup olive oil
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 325°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine oats, brown sugar, almonds, pumpkin seeds, chia seeds, salt, and cinnamon.

  • In a separate bowl, whisk together maple syrup, pumpkin puree, olive oil, and vanilla.

  • Pour the wet mixture over the dry ingredients. Stir until everything is evenly coated. Spread the granola mixture onto the prepared baking sheet in an even layer.
  • Bake for 30 to 35 minutes, rotating the pan 180 degrees half way through to ensure even baking.
  • Remove from the oven and let granola cool completely. It will crisp as it cools. Store in an airtight container for up to two weeks.

Notes

✔️ Use parchment paper to prevent sticking and make cleanup easy.
✔️ Let the granola cool completely before storing so it stays crunchy.
✔️ Do not skip rotating the pan 180 degrees halfway through to prevent burning and to bake evenly. Start checking the granola at 30 minutes to prevent burning.
✔️ Add dried cranberries or chocolate chips after baking for extra flavor.
