Maple Spiced and Roasted Carrots

Ingredients

  • 4 cups sliced carrots or baby carrots
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Prepare the carrots: Wash, peel, and slice the carrots into even pieces if using large carrots. If using baby carrots, leave them whole.

  • Coat the carrots: In a large bowl, combine olive oil, maple syrup, thyme, paprika, cayenne, cumin, salt, and pepper. Stir until well mixed. Toss the carrots in the maple spice mixture until evenly coated. Spread them in a single layer on the prepared baking sheet.

  • Roast the carrots: Roast for 25 to 30 minutes, stirring once halfway through, until the carrots are tender and lightly caramelized.
  • Serve warm: Transfer the carrots to a serving dish and drizzle any remaining glaze from the pan over the top.

Notes

✔️ Cut carrots evenly: This ensures the carrots cook at the same rate and caramelize evenly.
✔️ Do not overcrowd the pan: Give the carrots space to roast instead of steam for that perfect golden finish.
