Sausage and Mushroom White Bolognese Penne Pasta

Ingredients

  • 2 stalks of celery diced
  • 2 carrots diced
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 cups mushrooms sliced
  • 4 slices bacon diced
  • 4 sausage links casings removed
  • 1 cup white wine
  • 2 cups chicken stock
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1 teaspoon oregano
  • 12 ounces penne pasta
  • Olive oil salt, and black pepper to taste

Instructions

  • Cook penne pasta in salted water until al dente. Drain and set aside. In a large skillet or Dutch oven, over medium heat. Add bacon and cook until crisp. Remove and set aside, leaving rendered fat in the pan.

  • Add sausage to the pan and cook until browned, breaking it apart into small pieces. Remove and set aside.

  • Add olive oil if needed and add in the onion, celery, and carrots to the pan. Cook until softened, about 5-7 minutes. Stir in garlic and mushrooms, cooking until fragrant and tender.

  • Return sausage and bacon to the pan. Stir in white wine and let simmer for 5 minutes until the liquid reduces. Add chicken stock, rosemary, thyme, and oregano. Simmer uncovered for 45 minutes, stirring occasionally.

  • Stir in heavy cream and cook for an additional 30 minutes, allowing the sauce to thicken. The n mix in Parmesan cheese, salt, and black pepper to taste. Toss with penne pasta until evenly coated. Serve hot with extra Parmesan on top.

Notes

✔️ Use good quality sausage for the best flavor, as it is the star of the sauce.
✔️ Allow the sauce to simmer low and slow so it reduces into a creamy consistency.
✔️ Fresh herbs add depth, but dried herbs can be used if needed.
✔️ Save a splash of pasta water to loosen the sauce if it becomes too thick.
