Spicy Beer Cheese Dip

Ingredients

  • 12 ounces sharp cheddar cheese shredded
  • 8 slices American cheese
  • 1 1/2 tablespoons cornstarch
  • 1 12-ounce bottle of beer, preferably an IPA
  • 1/3 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • Kosher salt to taste

Instructions

  • In a medium bowl, toss the shredded cheddar cheese with cornstarch until evenly coated.

  • In a medium saucepan over medium heat, pour in the beer and bring to a gentle simmer. Whisk in the Dijon mustard, Worcestershire sauce, hot sauce, and heavy cream.

  • Gradually add the cheddar cheese, stirring constantly until melted and smooth.

  • Add the American cheese and continue stirring until everything is completely melted and silky. Season with salt to taste and adjust the spice level with more hot sauce if desired. Serve immediately while warm.
    8 slices American cheese, Kosher salt

Notes

✔️ Use freshly shredded cheese for the best texture. Pre-shredded cheese often contains anti-caking agents that affect melting.
✔️ Simmer the beer gently—do not boil—to preserve its flavor and prevent curdling.
✔️ Adjust spice by adding more or less hot sauce to match your taste.
✔️ If the dip becomes too thick, stir in a splash of warm beer or cream to loosen it.
