Spicy Prosciutto Pesto and Burrata Sandwich

Ingredients

  • Focaccia or Ciabatta bread
  • 1 to 2 teaspoons of harissa
  • 1 ball of burrata cheese
  • 4 to 6 slices of prosciutto
  • 1 ripe tomato sliced
  • 1 to 2 teaspoons of Pesto spread homemade or store-bought

For the Homemade Pesto:

  • 1 cup fresh basil leaves
  • 3 tablespoons toasted pine nuts
  • Juice from 1 lemon
  • 3 cloves garlic
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Make the Pesto (if using homemade): In a food processor or blender, combine basil, pine nuts, lemon juice, and garlic. Pulse until finely chopped. Slowly drizzle in olive oil while blending until smooth. Stir in Parmesan cheese, then season with salt and pepper to taste.
  • Prepare the Bread: Slice your focaccia or ciabatta horizontally and toast lightly in the oven or on a skillet until warmed and crisp around the edges.
  • Assemble the Sandwich: Spread harissa on one side of the bread and pesto on the other. Layer tomato slices, followed by prosciutto, and top with torn pieces of burrata.
  • Serve: Place the top half of the bread over the filling. Slice in half and serve immediately while the burrata is creamy and soft.

Notes
