Spicy Sausage and Peppers Pasta with Burrata

Ingredients

  • 1 pound of pasta penne, rigatoni, or orecchiette work well
  • 4 spicy Italian sausage links casing removed
  • 1 red or green bell pepper thinly sliced
  • 1 onion diced
  • 14 oz can of crushed tomatoes
  • 1 tablespoon sugar
  • 3/4 cup of sliced mushrooms
  • 4 cloves of garlic minced
  • 1/4 cup of sliced jarred banana peppers
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup Pasta water to thin sauce as needed
  • 1/4 cup Parmesan cheese for topping
  • 2 balls of burrata or fresh mozzarella

Instructions

  • Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve 1/4 cup of pasta water and drain the rest.

  • While the pasta cooks, heat a large skillet over medium heat. Add sausage, breaking it up with a wooden spoon. Cook until browned and cooked through. Remove the sausage and set aside.

  • Add the diced onion and cook for 4 minutes. Add in the sliced peppers, mushrooms, and garlic. Sauté for 6 minutes, until softened and fragrant. Stir in the crushed tomatoes, sugar, banana peppers, salt, pepper, and 1/4 cup of reserved pasta water. Simmer for 10 minutes, stirring occasionally.

  • Add the drained pasta to the sauce and toss to coat. Add more reserved pasta water if needed to loosen the sauce.
  • Plate the pasta and top each bowl with half a ball of burrata. Sprinkle with Parmesan cheese and serve immediately.

Notes

✔️ Use high-quality spicy sausage for the best flavor, or swap for sweet if you prefer a milder dish.
✔️ Banana peppers add tang and heat, but you can leave them out.
✔️ Add your pasta directly to the sauce while it is hot for better flavor absorption.
✔️ Burrata is best served at room temperature so it melts slightly into the pasta.
✔️ For a vegetarian version, omit the sausage and use sautéed eggplant or zucchini instead.
