Easy Blueberry Swirl Ice Cream

This recipe uses simple ingredients that you likely already have in your kitchen. The smooth vanilla base is swirled with fresh blueberry compote and a touch of blueberry simple syrup for extra flavor. Aside from the ease of this recipe, I love that you will have extra leftover blueberry simple syrup to add to drinks like iced lattes, iced matchas, and fresh lemonade.

Ingredients Needed to Make Easy Blueberry Swirl Ice Cream~

For the Blueberry Compote and Simple Syrup~
  • 2 cups of fresh blueberries
  • 1 cup of water
  • 3/4 cup of sugar
For the Ice Cream Base~
  • 2 cups Heavy Cream
  • 1 14-oz Can Sweetened Condensed Milk
  • 2 tsp Vanilla Extract
  • Cooled blueberry compote
  • 1/4 cup of cooled blueberry simple syrup

Notes for Success~

✔️ Make sure the blueberry compote and syrup are completely cool before adding to the ice cream base to prevent melting.
✔️ Use cold heavy cream for easier and faster whipping.
✔️ Do not over-swirl the blueberries into the ice cream base to keep beautiful streaks and pockets of fruit.
✔️ For a stronger blueberry flavor, double the amount of blueberry simple syrup you add to the base of the ice cream.

Ingredients

For the Blueberry Compote and Simple Syrup

  • 2 cups fresh blueberries
  • 1 cup water
  • 3/4 cup sugar

For the Ice Cream Base

  • 2 cups heavy cream
  • 1 can 14 ounces sweetened condensed milk
  • 2 teaspoons vanilla extract
  • Cooled blueberry compote
  • 1/4 cup cooled blueberry simple syrup

Instructions

  • In a small saucepan, combine blueberries, water, and sugar. Bring to a gentle simmer over medium heat. Stir occasionally and cook until the blueberries soften and burst, about 10 minutes.
    2 cups fresh blueberries, 3/4 cup sugar, 1 cup water
  • Strain half of the liquid to create the blueberry simple syrup. Set aside and let both the syrup and compote cool completely.
  • In a large mixing bowl or stand mixer with the whisk attachement, whip the heavy cream until stiff peaks form.

  • In a separate bowl, whisk together the sweetened condensed milk, vanilla extract, and blueberry simple syrup. Gently fold the whipped cream into the sweetened condensed milk mixture until combined.
    1 can, 2 teaspoons vanilla extract, 1/4 cup cooled blueberry simple syrup
  • In a loaf pan or freezer safe dish, layer the ice cream base with spoonfuls of blueberry compote. Use a knife to gently swirl the blueberry mixture into the cream.

  • Cover with plastic wrap and freeze for at least 6 hours or overnight before serving.
