Tomato and Sausage Pasta with Goat Cheese

Cozy up with a big bowl of my Tomato and Sausage Pasta with Creamy Goat Cheese. The canned tomatoes are cooked down to a jam like consistency with flavorful sausage, herbs, and balsamic vinegar. Then tossed with goat cheese to create a creamy sauce to coat the pasta.

Simple Pantry Ingredients

We are making pasta sauce from scratch, and it could not be any easier. This recipe only requires a few simple ingredients you already have on hand in your pantry. The secret to a flavorful sauce is to let the sauce cook down and concentrate the flavors of the tomatoes, balsamic vinegar, and herbs.

Creamy Goat Cheese

The goat cheese melts, creating a tangy and creamy sauce. Feel free to choose your favorite pasta for this recipe. I went with rigatoni because all the little ridges held on to the sauce extremely well. so much flavor in every bite.

Ingredients Needed to Make Tomato and Sausage Pasta with Creamy Goat Cheese

Sausage

Olive Oil

Shallots

Salt

Sugar

Garlic

Balsamic Vinegar

Diced Tomatoes

Dried or Fresh Oregano

Dried or Fresh Thyme

Red Pepper Flakes (optional)

Pasta (Any Type)

Goat Cheese

Parmesan Cheese

How to Make Tomato and Sausage Pasta with Creamy Goat Cheese Step by Step

STEP 1: Slice the shallots and chop the garlic. Heat a large pan to medium heat with olive oil. Add the shallots to a pan with salt and sugar. Cook for 5 minutes. Add in the sausage, break it up with a spoon and cook for 10 minutes or until browned.

STEP 2: Drain extra fat in the pan. Add in the garlic, balsamic vinegar, oregano, and thyme. Cook for a minute, then add in the diced tomatoes. Mix until combined. Cover and cook on low heat for 30 minutes.

STEP 3: Bring a pot of water to a boil and add salt. Cook your pasta according to the directions on the package.

STEP 4: Add the goat cheese and red pepper flakes, if desired, to the sauce. Add in the pasta and toss until combined. Top with more goat cheese and parmesan cheese and enjoy!

Notes for Success

The key to a flavorful sauce is to let the sauce cook down for enough time to have the flavors meld together. Start your pasta water about 20 minutes before your sauce is ready, so the pasta is ready and stays warm.

Storage

You can store your tomato and sausage pasta with creamy goat cheese in an airtight container in the refrigerator for up to 4 days.

So much flavor is packed into every bite of this tomato and sausage pasta with creamy goat cheese. The homemade sauce is cooked down to concentrate the flavors then topped with creamy goat cheese for extra creaminess.

Ingredients

  • 16 oz Ground Sausage
  • 1 Shallot or Small Onion

  • 2 tbsp Olive Oil

  • 1 tsp Fresh or Dried Oregano
