Ingredients
1tbspButter
5Eggs
½tspCourse Black Pepper
2tbspHeavy Cream or Milk
¼cupParmesan Cheese
Salt to taste
2Slices of Bread
Instructions
Melt butter in a non-stick pan over medium-low heat. Add the eggs, heavy cream, grated parmesan cheese, and coarse ground black pepper to a medium-sized bowl. Mix well with a whisk or a fork.
Add egg mixture to the preheated pan. Begin moving the eggs around the pan in circular motions with a spatula. Continue to move the eggs around the pan until they begin to thicken, you are looking for a fully cooked, soft scrambled texture. Season with salt to taste.
Serve immediately on toasted and buttered bread. Lay your Cacio e Pepe Soft Scrambled eggs on the toast and top with more parmesan and black pepper. Enjoy!
Notes
Cooking your eggs on medium-low heat will ensure they stay soft and creamy. I recommend using a non-stick pan to cook your scrambled eggs. If you can use freshly grated parmesan cheese and fresh cracked black pepper for the best flavor.
