Creamy Miso and Garlic Green Beans

These creamy miso and garlic green beans are the perfect side dish to complete any dinner. The dish is savory and umami from the miso paste and a delicious alternative to the typical, made-from-a-can version of green bean casserole we see every holiday season.

Ingredients

  • 1 tbsp Olive oil
  • 12 oz Fresh green beans
  • 4 oz Baby bella mushrooms, sliced
  • 1 small Onion, thinly sliced
  • 4 cloves Garlic, minced
  • 2 tbsp White miso paste
  • ½ cup Heavy cream
  • Salt and Pepper
  • cup Crispy Fried Onions (Optional)

Instructions

  • Add the 12oz of green beans to a large microwave-safe bowl and cook for 4-5 minutes depending on how done you like your green beans.
  • While the green beans are cooking add 1 tbsp of olive oil to a large pan on medium heat once the pan is hot add in the sliced onions and cook for 4-5 minutes or until softened. Add in the 4oz of Sliced Baby Bella Mushrooms and 4 Cloves of minced garlic and cook for another 8-10 minutes.
  • Push the mushrooms and onions to one side of the pan and add 2 tbsp White Miso Paste and 1/2 cup of Heavy Cream to the clear area. Whisk until smooth and Season with salt and pepper. Once the sauce is smooth add in the cooked green beans and mix everything well. Cook for another 3-5 minutes.
  • Top with 1/3 cup of Crispy fried onions if desired and serve immediately. Enjoy!

Notes

Precooking the green beans in the microwave par-cooks them and helps them keep their pretty green color. You can also cook them in boiling salted water for 3-4 minutes, blanch them in ice water, or throw them straight into the mushroom miso base. The green beans in the recipe come out slightly al dente because I like a little bite to my beans. If you like your green beans soft, I recommend adding 1-2 minutes to the microwave cook time.
