Curried Chicken Salad with Almonds

This recipe is an upgrade of basic chicken salad with flavorful curry powder. The recipe is full of flavor and extremely simple to make ahead for the week.

Ingredients

  • 2 cups Shredded or Diced Chicken
  • 1/2 cup Mayonnaise
  • 1/2 cup Plain Greek Yogurt
  • 1 tsp Curry Powder
  • 1/2 tsp Ground Cumin Powder
  • 1/4 cup Slivered Almonds
  • 1/2 Diced Red Onion
  • 1/3 cup Dried Cranberries
  • 1 tsp Honey
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  • Shred or dice the chicken. Dice 1/2 of a red onion and toast the slivered almonds in a small pan over medium heat or until lightly browned about 5 minutes.
  • Add the shredded or diced chicken, greek yogurt, mayo, diced red onion, dried cranberries, curry powder, cumin powder, honey, and salt and pepper to a bowl. Mix well.
  • Add the curried chicken salad to your favorite toasted bread with lettuce and tomato if you like and enjoy!

Notes

You can use all mayo or all Greek yogurt depending on your preference. The slivered almonds can be substituted with any nut of your choice cashews would be a great option. Curry powder is not spicy but it is a strong spice the amount added can be adjusted to taste.
