Ingredients

  • 4 Eggs
  • 1 tbsp Cooking Oil
  • ½ Bell Pepper
  • ½ Small Onion
  • 1 cup Tortilla Chips
  • ¼ tsp Cayenne Powder
  • ½ tsp Salt
  • ½ tsp Black Pepper

Instructions

  • Begin by dicing the onion, and bell pepper. Add the eggs, salt, pepper, and cayenne powder to a bowl and mix with a fork or a whisk until well combined.
  • Preheat a nonstick pan over medium heat and add oil. Once the pan is preheated add the chopped onions and bell pepper. Saute for about 5 minutes until the onions and bell peppers have softened.
  • Add the scrambled eggs to the pan on top of the onions and peppers. After a few seconds move the eggs around the pan a few times then add the tortilla chips to the eggs and keep moving the eggs around until firm and cooked through. Remove from the heat and serve immediately. Top with desired toppings.

Notes

Make sure to cook the eggs, though a little before you add the tortilla chips. If you add the chips too soon, the tortillas can become soggy. Feel free to add any toppings you like, salsa, avocado, cheese, and cilantro are my favorites. You can use jalapeno or bell pepper or both if you prefer. If you don't like spice, you can omit the cayenne powder.
