Kale Salad with Homemade Ranch Dressing

This kale salad is packed with nutrients and flavor. The creamy homemade ranch dressing coats each piece of kale giving every bite zesty flavor.

Ingredients

Kale Salad

  • 1 Head of Fresh Kale
  • ½ cup Shredded Carrots
  • 1 Small Cucumber
  • ½ cup Cherry Tomatoes
  • cup Raw or Pickled Red Onion
  • ¼ cup Sunflower Seeds

Homemade Ranch

  • 1 cup Plain Greek Yogurt
  • cup Mayonnaise
  • 2 cloves Fresh Grated or Minced Garlic
  • ¼ cup Chopped Fresh Dill
  • ¼ cup Chopped Fresh Parsley
  • 2 tbsp Lemon Juice
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

Instructions

  • Start by making the homemade ranch dressing. Mix the Greek Yogurt, Mayo, Grated Garlic, Chopped Dill and Chopped Parsley, Lemon Juice, Salt, and Pepper to taste. Mix well and set aside.
  • Chop your kale into bite size pieces. Toss the chopped kale into a bowl with a drizzle of olive oil and a pinch of salt. Massage the kale with your hands for about 1 minute to soften the kale.
  • Prepare your veggies. Slice your cucumber and tomatoes. Shred your carrots and slice the raw red onion if you are not using pickled onions.
  • Assemble the salad. Toss the kale with the homemade ranch. Add the veggies, pickled onions, and sunflower seeds. Serve and enjoy!

Notes

Massaging your kale will not only add tenderness but it will add flavor as well. The recipe makes more homemade ranch dressing than you will need. The dressing can last up to 5 days in the fridge. Making the dressing ahead of time will give the dressing more time to let the flavors come together.
