Nectarine Almond Crisp

This nectarine almond crisp is easily the most perfect summer dessert. The crisp is lightly sweetened to allow the natural sweetness of the ripe nectarines to take center stage. We add an simple almond, oat crumble on top and bake!

Ingredients

  • 5 Ripe Nectarines
  • 1 tbsp Honey
  • 1 tsp Almond Extract or Vanilla Extract
  • ½ cup Butter
  • ½ cup Slivered Almonds
  • ¼ cup Brown Sugar
  • ¾ cup White Sugar
  • ½ cup Flour
  • ½ cup Rolled Oats
  • ¼ tsp Salt

Instructions

  • Freeze the butter for 30 minutes. Preheat the oven to 375 degrees F. While the butter is freezing, prepare your dry ingredients. Combine flour, brown sugar, white sugar, oats, salt, and slivered almonds in a medium bowl. Mix well.
  • Prepare your fruit filling. Slice the nectarines into thin slices. Add the nectarines to a separate medium size bowl with the honey and almond or vanilla extract and mix well.
  • Using a cheese grater carefully grate the butter into the dry ingredients. Once the butter is grated, give the mixture a stir. You may need to use your hands to combine by rubbing the mixture in between your fingers until it resembles a very coarse sand, clumps are okay.
  • In a 9x11 baking dish add the nectarines and spread into an even layer. Add the crumble to the top and spread it into an even layer. Pop the dish into a preheated oven for 45 minutes. The filling should be bubbly, and the top should be slightly browned. Let the crisp cool for at least 15 minutes and enjoy!

Notes

If you like a sweeter fruit crisp you can add white or brown sugar to your nectarines. Use almond extract or vanilla extract, whichever you have on hand. I recommend letting the crisp cool down for at least 15 minutes. You can serve the crisp with Whipped cream or vanilla ice cream.
