Ingredients

Chicken

  • 1 LB Ground Chicken
  • 1 tbsp oil (olive, canola or vegetable)
  • ½ Onion
  • 1 Red Bell Pepper
  • 2 Cloves Garlic
  • 1 large Zucchini

Sweet Thai Sauce

  • 1 tbsp Sesame Oil
  • 2 tbsp Hoisin
  • 1 or 2 tbsp Sriracha
  • 2 tbsp Sweet Chili Sauce
  • 1 tsp Fish Sauce
  • cup Roasted Peanuts

Garnish

  • handful Cilantro
  • scallions
  • 1 Lime

Instructions

  • Begin by prepping your vegetables. Dice onion, red bell peppers. Chop zucchini into a half-moon shape by slicing in half then down the middle lengthwise and slice into half-moon shape. Chop garlic. Slice scallions and rinse and rough chop your cilantro. If you are serving over rice, start your rice as well.
  • Mix soy sauce, chopped garlic, sesame oil, hoisin, sriracha, sweet chili sauce and fish sauce in a bowl until combined and set aside. Heat a pan to medium heat with 1 tbsp of oil. Add in Ground chicken to the pan and break it up with a large spoon. Cook the chicken for 5 minutes.
  • Add the zucchini, onions and bell peppers to the pan and cook for another 10 minutes. Then add in your sauce and peanuts. Cook everything on medium heat for another 5 minutes. By this point your sauce should have thickened and the zucchini should be cooked through. Top with cilantro, scallions, and lime juice. Serve immediately over rice and enjoy!

Notes

If you can’t find fish sauce or don't like fish sauce you can use white, or apple cider vinegar as a substitute. Feel free to add your favorite veggies. If you add a firmer vegetable like carrots add it in with the chicken.
