Blueberry Cinnamon Overnight French Toast

This blueberry cinnamon overnight French toast is the perfect brunch dish. It is so easy and delicious. All the work is done the night before so in the morning you can just wake up and bake a simple breakfast the whole family will love.

Easy Prep

Overnight French toast is exactly how it sounds, and it could not be much simpler. Instead of making each piece of French toast one at a time, you put all the ingredients into a casserole dish and bake. Preparing the dish, the night before allows the flavor and liquid to soak into the bread.

Like a blueberry muffin

The overnight blueberry cinnamon French toast gets all the same ingredients a typical French toast would have, just a little more exciting. For the bread we’re looking for something dense and buttery like brioche or challah bread. The blueberries bake and get caramelized in between the crevices of the bread. The streusel topping gives an added depth of buttery, brown sugar flavor.

French Toast~

  • Brioche or challah bread 
  • Blueberries 
  • Eggs 
  • Heavy Cream
  • Milk  
  • Vanilla extract 
  • Cinnamon 
  • Maple syrup 

Streusel Topping~

  • Brown sugar
  • Flour
  • Butter 
  • Brown Sugar
  • Cinnamon
  • Salt 
how to make the blueberry cinnamon french toast step by step

STEP 1: Prepare the bread, tearing it into large pieces. Prepare the custard by adding the eggs, heavy cream, milk, vanilla extract, cinnamon, and maple syrup to a large bowl and whisk well, until combined. Sprinkle the blueberries evenly around the bread and pour the custard evenly over the torn bread. Cover the dish and store it in the refrigerator overnight or until you are ready to cook. 

STEP 2: You can make the streusel topping the night before as well by mixing the softened butter, flour, brown sugar, cinnamon, and salt in a medium size bowl. Using your hands, break up the butter and mix well. The mixture should resemble coarse sand. Cover the bowl and store in the refrigerator overnight or until you are ready to cook. 

STEP 3: Preheat the oven to 350 degrees F. Take out the French toast and sprinkle the streusel, evenly on top. Bake the French toast for 45 minutes. Allow the French toast to cool for at least 10 minutes before you cut into it and serve. You can serve the overnight blueberry cinnamon French toast warm with syrup. Enjoy!

notes for success

You want the bread to be slightly stale, so that it does not get soggy when you pour the custard over it. If you prefer a sweeter French toast, feel free to add sugar in place of or in addition to the maple syrup.

storage

You can store your baked blueberry cinnamon overnight French toast in a sealed container in the refrigerator for up to 3 days.

Ingredients

French Toast

  • 1 loaf Brioche or challah Bread
