Cacio e Pepe Soft Scrambled Eggs

Jazz up breakfast with these Cacio e Pepe Soft Scrambled Eggs. You only need a few ingredients to make these creamy, velvety eggs. These soft scrambled eggs are loaded with parmesan and coarsely cracked pepper. Layer the eggs on your favorite toasted bread and enjoy a decadent breakfast.

Cheese and Pepper

Eggs are a blank canvas, welcoming any additional flavors. Cacio e Pepe literally means “cheese and pepper.” The addition of our star ingredients creates a creamy soft scrambled egg texture and the steps to make the meal are incredibly simple. The secret to perfecting this dish is fresh cracked pepper from whole pepper corns. Pre cracked or ground pepper will lose its flavor and potency after it has been processed. So, by the time the pepper hits your food, its flavor has diminished. To create course cracked pepper, simply turn your pepper grinder to the largest setting, or use a mortar and pestle to grind the peppercorns by hand. For the cheese I recommend using fresh grated parmesan. Freshly grated parmesan will melt better and contribute more flavor.

Ingredients Needed to Make Cacio e Pepe Soft Scrambled Eggs

  • Eggs
  • Heavy Cream or Milk
  • Butter
  • Parmesan Cheese (freshly grated)
  • Course Ground Pepper
  • Salt
  • Bread (Your Favorite Variety)

How to Make Cacio e Pepe Soft Scrambled Eggs Step by Step~

STEP 1: Melt butter in a non-stick pan over medium-low heat. Add the eggs, heavy cream, grated parmesan cheese, and coarse ground black pepper to a medium-sized bowl. Mix well with a whisk or a fork.

STEP 2: Add egg mixture to the preheated pan. Begin moving the eggs around the pan in circular motions with a spatula. Continue to move the eggs around the pan until they begin to thicken, you are looking for a fully a cooked soft scrambled texture. Season with salt to taste.

STEP 3: Serve immediately on toasted and buttered bread. Lay your Caico e Pepe Soft Scrambled eggs on the toast and top with more parmesan and black pepper. Enjoy!

Notes for Success

Cooking your eggs on medium-low heat will ensure they stay soft and creamy. I recommend using a non-stick pan to cook your scrambled eggs. If you can use freshly grated parmesan cheese and fresh cracked black pepper for the best flavor.

Ingredients

  • 1 tbsp Butter

  • ½ tsp Course Black Pepper
  • 2 tbsp Heavy Cream or Milk
  • ¼ cup Parmesan Cheese
  • Salt to taste
  • 2 Slices of Bread
