Curry Chicken Salad

My version of curried chicken salad with almonds is the perfect balance of sweet and savory. I use cranberries for added sweetness and texture. This chicken salad is perfect on a sandwich or served with crackers and dipped.

Curry Elevates a Basic Chicken Salad

Chicken salad can be a little boring the addition of curry powder elevates the dish and adds a ton of flavor. The combination of mayo and Greek yogurt lends a creamy texture and tangy flavor. The Onion adds flavor and the slivered almonds add crunch while a touch of honey gives the chicken salad a touch of sweetness. The recipe is simple and you can use leftover chicken, rotisserie chicken, or cook up a few chicken breasts.

Ingredients Needed to Make Curried Chicken Salad with Almonds

  • Shredded or Diced Cooked Chicken
  • Mayo
  • Greek Yourgt
  • Curry Powder
  • Cumin Powder
  • Diced Red Onion
  • Dried Cranberries
  • Toasted slivered almonds
  • Honey
  • Salt and Pepper

How to Make Curried Chicken Salad with Almonds Step by Step

STEP 1: Shred or dice the chicken. Dice 1/2 of the red onion and toast the slivered almonds in a small pan over medium heat until light brown in color.

STEP 2: Add the shredded or diced chicken, greek yogurt, mayo, diced red onion, dried cranberries, curry powder, cumin powder, honey, and salt and pepper to a bowl. Mix well.

STEP 3: Add the curried chicken salad to your favorite toasted bread with lettuce and tomato if you like and enjoy!

Notes for Success

You can use all mayo or all Greek yogurt depending on your preference. The slivered almonds can be substituted with any nut of your choice cashews would be a great option. Curry powder is not spicy but it is a strong spice the amount added can be adjusted to taste.

Ingredients
