Sweet Thai Chicken

This tangy and sweet, Asian inspired sweet Thai chicken with peanuts, is the perfect weeknight dinner. The whole dinner comes together in under 30 minutes, and it’s packed with so much flavor. There are a few simple steps, and the ingredients are customizable to suit all palettes. 

We have so many amazing flavors going on, sweet, a hint of spice and nuttiness from the peanuts. I also snuck in some veggies, because Ya know, health, and it makes a more complete meal. You can serve your Sweet Thai chicken with peanuts over steamed rice or noodles would be great too. The sweet sauce will reduce and thicken up in the pan making a delicious sauce to coat the chicken.

My favorite part of this dish is the fact that it comes together so quickly. We use pre-ground chicken, so truly little fuss, and no chopping, it goes right into the pan. Stir together some ingredients for the sauce and cook up some rice and you will have dinner ready in no time. I added peanuts for texture and flavor, but feel free to use your favorite nut, cashews would be great too.

  • Ground Chicken 
  • Oil (olive, vegetable, or canola)
  • Onion 
  • garlic
  • Zucchini or vegetable of choice 
  • Bell Pepper
  • Soy Sauce 
  • Sesame Oil 
  • Hoisin sauce
  • Sriracha 
  • Sweet Chili Sauce 
  • Fish Sauce 
  • Peanuts 
  • Cilantro and Scallions and lime juice

STEP 1: Begin by prepping your vegetables. Dice onion, red bell peppers. Chop zucchini into half-moon shapes by slicing in half then down the middle lengthwise and slice into half-moon shape. Slice scallions, chop Garlic. Rinse, and chop your cilantro. If you are serving over rice, start your rice as well. 

STEP 2: Mix soy sauce, garlic, sesame oil, hoisin, sriracha, sweet chili sauce and fish sauce in a bowl until combined and set aside. Heat a pan to medium heat with 1 tbsp of oil. Add in Ground chicken to the pan and break it up with a large spoon. Cook the chicken for 5 minutes. 

STEP 3: Add the zucchini, onions and bell peppers to the pan and cook for another 10 minutes. Then add in your sauce and peanuts. Cook everything on medium heat for another 5 minutes. By this point your sauce should have thickened and the zucchini should be cooked through. Top with cilantro, scallions, and lime juice. Serve immediately over rice and enjoy!

notes for success

If you can’t find fish sauce or don’t like fish sauce you can use white, rice or apple cider vinegar as a substitute. Feel free to add your favorite veggies. If you add a firmer vegetable like carrots, add it in with the chicken so they have longer to cook. You can top with your favorite herbs or substitute the nuts.

You can store your sweet Thai chicken with peanuts in a sealed air-tight container in the refrigerator for up to 4 days.

Sweet Thai Chicken with Peanuts

Ingredients

Chicken

  • 1 LB Ground Chicken
  • 1 tbsp oil (olive, canola or vegetable)
  • ½ Onion
  • 1 Red Bell Pepper
  • 2 Cloves Garlic
  • 1 large Zucchini

Sweet Thai Sauce

  • 1 tbsp Sesame Oil
  • 2 tbsp Hoisin
  • 1 or 2 tbsp Sriracha
  • 2 tbsp Sweet Chili Sauce
  • 1 tsp Fish Sauce
  • ⅓ cup Roasted Peanuts

Garnish

  • handful Cilantro
  • scallions
  • 1 Lime

Instructions
