Ingredients

  • 1/4 cup maple syrup
  • 1 lb Brussels sprouts washed and quartered
  • 8 medjool dates pitted and chopped into bite-sized pieces
  • 4 slices thick-cut bacon cut into 1-inch pieces
  • 1/4 cup brown sugar
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp thyme fresh or dried

Instructions

  • Preheat your oven to 375°F
  • In a large bowl, toss together the Brussels sprouts, chopped dates, chopped bacon, brown sugar, maple syrup, olive oil, salt, pepper, and thyme until everything is evenly coated.
  • Spread the mixture out onto a large sheet pan in an even layer.
  • Roast for 30–35 minutes, stirring once halfway through, until the Brussels sprouts are golden and crisp on the edges and the bacon is fully cooked. Serve immediately and enjoy!

Notes

✔️ Use fresh Brussels sprouts for best texture—frozen won’t roast the same way.
✔️ Cut sprouts into quarters for more surface area and crispier edges.
