Ingredients
- 4–5 pound whole chicken
- 3 tablespoons butter
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 3 cloves garlic minced or grated

Instructions
- Preheat your oven to 325°F. Prepare your roasting pan or a large cast-iron or heavy pan by laying out the quartered onions in a circle on the bottom of the pan.
