Caramelized Onion Fig and Prosciutto Pizza

Figs are in season right now and this caramelized onion fig and prosciutto pizza is calling your name. Crispy prosciutto, sweet, caramelized onions, fresh figs then topped with fresh mozzarella and tangy goat cheese. This pizza is one of a kind. 

Types of Figs

Figs are plump and sweet little treats, there are so many varieties of figs. There are mission figs, brown turkey figs, and Sierra figs just to name a few. Really any fresh fig you can find will work great. The season for figs usually runs from May- November. If you can get ahold of fresh figs, I would recommend using them. If figs are out of season or you have a tough time finding them, you can use dried figs. I would recommend letting them soak in water for a few minutes to add some hydration.

The caramelized onions are an amazing addition to the pizza, and really create yet another layer of flavor. Although I would not recommend skipping the step you can use raw sweet white onions in place of the caramelized onions. The dough can be homemade, or store bought, this is the pizza dough recipe I used. All the flavors work so well together from the sweetness of the figs to the saltiness from the prosciutto and the tangy bite from the creamy goat cheese.

  • Pizza Dough (Store Bought or Homemade)
  • Honey
  • Olive Oil 
  • Fresh Figs (I used Brown Turkey Figs)
  • Prosciutto 
  • Goat Cheese 
  • Fresh Mozzarella
  • Dried or Fresh Thyme  
  • White Onion 
  • Butter 
  • Sugar 
  • Salt 
How to make Caramelized onion fig and prosciutto pizza step by step

STEP 1: Thinly slice the onion. In a medium saucepan over medium low heat add the butter, sliced onions, sugar and salt. Stirring occasionally cook the onions for about 30 minutes until they become a deep caramel color. 

STEP 2: Preheat the oven to 500 degrees F. On a floured surface roll out your pizza dough with a rolling pin by moving the rolling pin back and forth then turning the dough in a quarter rotation, and then repeat until the dough resembles a large circle. Transfer the rolled-out pizza dough to a large sheet pan. 

STEP 3: Brush or drizzle the pizza dough with olive oil and honey. Then add mozzarella cheese, then the figs (quartered or sliced), Prosciutto, caramelized onions, and goat cheese to the pizza spread out evenly. Sprinkle thyme evenly around the pizza. 

STEP 4: Bake the pizza in the oven for about 12 minutes. (Every oven is different, your cooking time might be shorter or longer) You should check the pizza, around the 10-minute mark. Take out the pizza then cut it and enjoy!

The cooking time can vary depending on your oven. I used a very basic oven, and my pizza was cooked in 12 minutes at 500 degrees F. You can use fresh or dried figs. If you do not have time to caramelize onions, you can use raw onions, just know this will change the flavor profile.

You can store any leftover pizza in a sealed airtight container in the refrigerator for up to 3 days.

Caramelized onion fig and prosciutto pizza

This pizza has it all, sweetness comes from the fresh figs, saltiness comes from the crispy prosciutto, and a tangy touch from the creamy goat cheese. The flavors are baked to perfection, creating the most delicious pizza.

Ingredients

  • 1 Pizza Dough (homemade or storebought)
