This BLT with avocado and red pepper mayo is a fun twist on the classic BLT we all know and love. B being the bacon (which we do not skimp on), L the crispy lettuce and T the fresh tomato is getting a face lift by adding smashed avocado and a homemade red pepper mayo yumm.

SImple and delicious

Whoever invented this lovely sandwich is my hero. Honestly, BLTs always seem to hit the spot; they are light and satisfying at the same time. The perfect combination of salty and fresh, with the addition of the creamy avocado spread and the homemade red pepper mayo we are really taking this classic sandwich to the next level.  

not your basic BLT

This sandwich is super easy to make while the bacon is crisping up in the oven. You will start your homemade red pepper mayo and prepare the veggies and avocado mash. Toast up your favorite bread, slap a healthy portion of avocado mashed on one piece and a slather of red pepper mayo on the other and build your masterpiece.

Sandwich ~

  • Bread
  • Bacon
  • Tomato
  • Lettuce (like romaine or iceberg)
  • Avocado 

Red Pepper May0~

  • Roasted Red Peppers
  • Mayo
  • Parsley
  • Lemon Juice 
  • Cayenne Powder 
  • Salt and Pepper

how to make the blt’s with avocado and red pepper mayo step by step

STEP 1: Begin by cooking your bacon by your preferred method. I like to cook mine in the oven. Preheat the oven to 400 degrees F, then lay the bacon on a foil lined baking sheet and cook in the oven for 20 minutes (Depending on how crispy you like the bacon adjust the cooking time, less for less crispy and more for extremely crispy). Drain your bacon on a paper towel lined plate.

STEP 2: While your bacon is cooking prepare the red pepper mayo by adding the mayo, roasted red peppers, parsley, lemon juice, cayenne powder, salt and pepper to a food processor or blender and blend on high for a minute until the mixture is smooth. 

STEP 3: Cut your lettuce into large pieces to cover your bread. Slice your tomato into thin slices and make your avocado mash by slicing the avocado lengthwise, scooping out the inside and using a fork to mash the avocado until you have a paste. Season the avocado mash with a squeeze of lemon and a pinch of salt and pepper. 

STEP 4: Toast up your favorite bread and assemble the BLT. Spread the avocado mash on one piece of bread and spread the red pepper mayo on the other piece of bread. Top with at least 4 slices of bacon, sliced tomato and lettuce. Cut the sandwich and serve! Enjoy!

notes for success

You can omit the cayenne powder in the red pepper mayo to make the mayo less spicy. Cook the bacon by your preferred method. Choose your favorite bread and toast if you prefer.

Ingredients

Sandwich

  • 8-10 slices Bacon
  • 2 leafs Romaine or Iceburg Lettuce
  • 1 Tomato

  • ½ cup Mayo
