Creamy Miso and Garlic Green Beans

Jump to Recipe Print Recipe
Miso and garlic green beans

My creamy miso and garlic green beans are the perfect veggie side. The miso creates a creamy base and adds a little umami flavor to vamp up the traditional green bean casserole. It is the perfect side dish to complete your Thanksgiving spread or any dinner really.

Creamy Miso and Garlic

Miso paste is a fermented soybean paste, made by combining soybeans, salt, and koji (a type of fungus cultivated on rice and other grains). Then allow the mixture to age for months or even years. You might know miso best from the miso soup in Japanese restaurants, the flavors are salty and umami and really elevate this dish.

Ingredients Needed to Make My Creamy Miso and Garlic Green Beans~

  • 12oz Fresh Green beans
  • 4oz Sliced Baby Bella Mushrooms
  • 1 Small Onion, thinly sliced
  • 4 Cloves of garlic, Minced
  • 2 tbsp White Miso Paste
  • 1/2 cup of Heavy Cream
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • Optional Topping (Crispy fried onions)

Notes For Success

Precooking the green beans in the microwave par-cooks them and helps them keep their pretty green color. You can also cook them in boiling salted water for 3-4 minutes, blanch them in ice water, or throw them straight into the mushroom miso base. The green beans in the recipe come out slightly al dente because I like a little bite to my beans. If you like your green beans soft, I recommend adding 1-2 minutes to the microwave cook time.

These creamy miso and garlic green beans are the perfect side dish to complete any dinner. The dish is savory and umami from the miso paste and a delicious alternative to the typical, made-from-a-can version of green bean casserole we see every holiday season.
