Kale Salad with Homemade Ranch Dressing

This kale salad with homemade ranch dressing is impossible to mess up. The homemade ranch dressing is thick and creamy and coats every square inch of the leafy kale. Topped with all the fresh veggies and pickled red onion. This salad will become a weeknight staple.

This may sound strange, but you want to massage your kale with a drizzle of olive oil and a sprinkle of salt. You want to get your hands into the bowl and give the kale a massage. A minute or two will suffice we are just trying to tenderize the kale. This salad has all the elements of a classic house salad with some tasty additions.

Make ahead

The homemade ranch dressing gets better the longer it sits so making this the perfect salad to make ahead of time and let chill in the fridge. The Homemade ranch is made with Greek yogurt and mayo for the base for a perfect creamy dressing. You can prep the kale and chop the veggies to make ahead and toss with the dressing when you’re ready to serve it.

Salad~
  • Kale
  • Shredded Carrots
  • Cucumber
  • Tomatoes
  • Sunflower Seeds
  • Pickled Red Onion or Raw Red Onion
Homemade Ranch Dressing~
  • Plain Greek Yogurt
  • Mayonnaise
  • Minced or Grated Garlic
  • Dill
  • Parsley
  • Lemon
  • Salt and Pepper to taste

STEP 1: Start by making the homemade ranch dressing. Mix the Greek Yogurt, Mayo, Garlic, Chopped Dill and Chopped Parsley, Lemon Juice, Salt and Pepper to taste. Mix well and set aside.

STEP 2: Chop your kale into bite size pieces. Toss the chopped kale into a bowl with a drizzle of olive oil and a pinch of salt. Massage the kale with your hands for about 1 minute to soften the kale.

STEP 3: Prepare your veggies. Slice your cucumber and tomatoes. Slice your carrots and raw red onion if you are not using pickled onions.

STEP 4: Assemble the salad. Toss the kale with the homemade ranch. Add the veggies, pickled onions, and sunflower seeds. Serve and enjoy!

Massaging your kale will not only add tenderness but it will add flavor as well. The recipe makes more homemade ranch dressing than you will need. The dressing can last up to 5 days in the fridge. Making the dressing ahead of time will give the dressing more time to let the flavors come together.

Ingredients

Kale Salad

  • 1 Head of Fresh Kale
  • ½ cup Shredded Carrots

  • ⅓ cup Raw or Pickled Red Onion
  • ¼ cup Sunflower Seeds

Homemade Ranch
