This mouthwatering turkey and brie sandwich with red pepper aioli is everything you need in a sandwich. This recipe is totally customizable, you can choose your favorite bread, greens, and cheese.
Lunch is ready in no time
I used sourdough because I like the tangy flavor and it toasts up nicely. The arugula has a peppery crunch that pairs well with the flavors in the sandwich. I used brie in the recipe because it has a delicious buttery flavor, and it melts super quick. Now all we need is the sauce to top it off and we are ready to go. The red pepper aioli requires only a few ingredients, and you can store it in the fridge to use on other sandwiches or as a dip for fries. Yum.

- Deli Turkey
- Bread (sourdough works great)
- Brie cheese
- Tomato
- Arugula

- Lemon juice
- Roasted red peppers (you can Make your own at home)
- Fresh herbs (I used parsley)
- Cayenne powder
how to make the turkey and brie sandwich with red pepper aioli step by step
STEP 1: Make your red pepper aioli. Add mayonnaise, lemon juice, roasted red peppers, herbs, cayenne powder and Salt and pepper to a food processor or blender. Blend sauce until smooth. Set it aside. Slice tomato and brie cheese into thin slices.
STEP 2: Toast bread to desired doneness. On two slices of bread layer red pepper aioli (as much or little as you want), deli turkey and a few slices of brie cheese. In your toaster oven or oven broil the open face turkey sandwich on high for 1 to 2 minutes or until the cheese is melty. (Keep an eye on the sandwich, so nothing burns).
STEP 3: Finish building your sandwich by adding sliced tomato, and a little arugula. If you love yourself then spread the red pepper aioli on the top piece of bread. Top your sandwich with the bread and serve immediately.
notes for success
Please add the red pepper aioli to both sides of the sandwich, you will not regret it. Feel free to omit the tomato if you’re not a fan. If you don’t like arugula or do not have any on hand, any spring mix or lettuce will work great. Choose any type of bread you like; I can picture this sandwich on a brioche roll too. Substitute your favorite cheese, brie is mild and melty.
