Easy Migas Recipe

Now, when you get to the bottom of a bag of tortilla chips and are left with small crumbs you don’t have to throw them away! Make Migas and enjoy an amazing, delicious breakfast. This quick and easy breakfast comes together in minutes and is full of protein and flavor. 

Tex-Mex Flavors

Translated in Spanish, “Migas” means crumbs. Migas is typically made with lightly fried corn tortillas and a mixture of eggs, onions, and peppers. With this easy Migas recipe, we are passing an entire step and using tortilla chips. You can use fresh fried corn tortillas. This version is much simpler and quicker. You can serve this dish with your favorite salsa, cheese, avocado and cilantro.

  • Eggs 
  • Oil 
  • Bell Pepper or Jalapeno 
  • Onion 
  • Tortilla Chips (Stale Tortilla Chips work great)
  • Cayenne Powder 
  • Salt and Pepper 
  • Salsa (topping)
  • Cheese (I used queso fresco, topping)
  • Avocado (topping)
  • Cilantro (topping)

how to make easy migas step by step

STEP 1: Begin by dicing the onion and bell pepper. Add the eggs, salt, pepper, and cayenne powder to a bowl and mix with a fork or a whisk until well combined.

STEP 2: Preheat a nonstick pan over medium heat and add oil. Once the pan is preheated add the chopped onions and bell pepper. Sauté for about 5 minutes until the onions and bell peppers have softened. 

STEP 3: Add the scrambled eggs to the pan on top of the onions and peppers. After a few seconds move the eggs around the pan a few times do this a few times then add the tortilla chips to the eggs and keep moving the eggs around until firm and cooked through. Remove from the heat and serve immediately. Top with desired toppings.

Make sure to cook the eggs through a little before you add the tortilla chips. If you add the chips too soon, the tortillas can become soggy. Feel free to add any toppings you like, salsa, avocado, cheese, and cilantro are my favorites. You can use jalapeno or bell pepper or both if you prefer.

You can store your easy Migas recipe in an airtight container in the refrigerator for up to 2 days.

Easy Migas

Breakfast made easy with this simple version of a tasty Tex-Mex style dish. This easy Migas recipe is made with tortilla chips and comes together in less than 15 minutes. Top the dish off with salsa and fresh avocado and you have a tasty, simple breakfast.

  • 4 Eggs
  • 1 tbsp Cooking Oil
