This watermelon and blueberry feta salad is the perfect summer salad. The crisp watermelon is refreshing and compliments the tangy feta. The basil balsamic vinaigrette lends a little savory to the sweetness of the watermelon. This salad is a summertime must. 

Crisp summer flavors

This salad came as an inspiration from a salad I love at a local restaurant in Annapolis. The watermelon is perfect for the summer and blueberries are the perfect complement to the crisp watermelon. This salad is simple and satisfying. The watermelon blueberry and feta salad come together in truly little time, leaving you with more time to enjoy the summer sun!

Feta is the perfect cheese to pair with watermelon. Feta is creamy and tangy, and the contrast is so good. Then we add almonds for a crunch and basil balsamic dressing. The basil is slightly sweet and very refreshing with the balsamic vinegar.

Salad~

  • Watermelon 
  • Blueberries 
  • Feta 
  • Slivered almonds 
  • Lettuce (use your favorite, I used a spring mix)

Basil Balsamic Dressing

  • Balsamic vinegar 
  • Honey 
  • Olive Oil 
  • Lime Juice
  • Fresh Basil 
How to make the watermelon and blueberry feta salad step by step

STEP 1: begin by preparing your produce, cut the watermelon into small cubes. Wash the blueberries. Finely chop the fresh basil.

STEP 2: Make the dressing by adding balsamic vinegar, honey, lime juice, and chopped fresh basil into a bowl. Mix with a whisk or fork until combined. Slowly add in the olive oil, while mixing vigorously, until all of the olive oil has been added and the dressing is emulsified. Alternatively, you can add all the ingredients to a tightly sealed jar and shake vigorously.

STEP 3: Build your salad. Add lettuce to a bowl, top the lettuce with the feta cheese, cut watermelon, blueberries, and almonds. You can serve the dressing on the side or toss the dressing on the salad before serving. Enjoy!

You can store the salad in a sealed airtight container in the refrigerator for up to 2 days. You can store the basil balsamic dressing separately in the refrigerator for up to 4 days.

Ingredients

Salad

  • 4 cups Favorite Lettuce (I used a spring mix)
  • ½ cup Blueberries
  • cup Crumbled Feta
  • 1 cup watermelon
  • ¼ cup Slivered Almonds

Basil Balsamic Dressing

  • 2 tbsp Balsamic Vinagirette
  • tbsp Honey
  • 1 Juice from 1 Lime
  • 3 tbsp Finely Chopped Fresh Basil
  • ¼ cup Olive Oil
